Ginger Fish Sauce

Ginger fish sauce makes a great pairing with duck or seafood. You can use this as a dipping sauce or add to noodle soup or congee.
Feel free to adjust the seasoning to your personal preference.
- In a small pot, add water and sugar. Bring the water to a gentle boil then add 1 part ginger, vinegar, and fish sauce.
- Bring the mixture to a gentle boil again and remove from heat.
- Transfer the sauce into a bowl, add the rest of the ginger and chili peppers.
