115 grams unsalted butter 180 ml unsulphured or dark molasses 120 grams plain yogurt 120 ml milk 334 grams all-purpose flour 100 grams light brown sugar 1 and ½ teaspoons Sparrow Ginger, ground 1 teaspoon ground cinnamon ½ teaspoon ground cloves ½ teaspoon allspice 1 large egg ¼ teaspoon salt 1 and ½ teaspoons baking soda
In a medium bowl, whisk all dry ingredients together. Set this dry mixture aside.
In a separate bowl, melt the butter and combine with molasses. Beat together with brown sugar, milk, yogurt, and egg until it becomes light and fluffy
Gradually add the wet ingredients to dry mix. Fold everything together and mix until everything is combined
Prepare the cream cheese filling by adding softened cream cheese, egg yolk, sugar, and vanilla extract in a bowl. Mix everything together until it’s smooth
Fill each muffin cup with the gingerbread muffin batter. Add a dollop of the cream cheese filling to the center of each muffin cup and give it a little stir
Bake in the preheated oven for about 20 - 25 minutes or until a toothpick inserted into the muffins comes out clean.
