Summer rolls, also known as fresh spring rolls or gỏi cuốn, are a delightful and healthy treat that is perfect for warm weather or any time you crave something light yet satisfying. The rolls are packed with fresh vegetables, juicy pork belly, tender shrimps, and soft rice noodles. Lots of delicious flavors and textures in one dish! This recipe calls for pork and shrimp, but feel free to substitute your choice of protein to suit your taste or dietary preferences.
With the help of Fila Manila's Kare Kare sauce, the dipping sauce comes together quickly! It adds an extra layer of flavor with savory peanut taste.
In a small pot, add enough water to cover an inch above the pork belly, Sparrow Ginger, and salt. Bring to a boil then add the pork belly and cook for about 20-25 minutes.
Remove from the stove. Let it cool and thinly slice.
In another small pot, add water and salt. Bring to a boil and cook the shrimps for 2-3 minutes until they're no longer translucent. Drain and run under cold water. Remove the shells and tails. Cut the shrimps in half lengthwise.
Depending on what type of rice noodles that you use, cook the noodles according to package instructions.
Wash your greens thoroughly and let them dry.
Prepare the Kare Kare sauce
Make fried Coastal Purple Shallot using this recipe. Adjust the quantity accordingly.
In a small bowl, add Kare Kare, fried shallots, and a pinch of Heaven Facing Chili. Mix well.
Assemble the summer rolls
Add warm water to a plate and lightly soak the rice paper sheet. Do not oversoak as it will become too soft and sticky.
On a plate, place a rice paper sheet at the bottom then layer with lettuce, mint, and a small amount of rice noodles (do not add too much to avoid difficulty in wrapping).
Add pork belly slices and shrimp halves (orange side down).
Fold the bottom of the rice paper over the filling and tuck it in tightly. Fold in the sides towards the center.
Continue rolling until the roll is closed, keeping it tight to hold the ingredients together.
Repeat with the remaining ingredients. Enjoy with Kare Kare sauce!
