The Northern Mountain Garlic, also known as purple garlic, is sourced from Hải Dương and harvested in January of the lunar year. Its small cloves are covered in layers of lightly purple papery skins. The semi-mountainous terrain produces fragrant garlic with a mildly spicy, nutty, and creamy taste. This product comes in a resealable bag.

You can use sliced Vietnamese northern mountain garlic, also known as purple garlic, in a variety of ways. Purple garlic is a great alternative to white or black garlic - the flavor profile is unique and gaining more recognition in the culinary community.
Here are three of our favorite ways to use or rehydrate this acclaimed Vietnamese herb.
- Use dehydrated sliced Northern Mountain garlic in place of fresh garlic. Sprinkle on salad or noodles.
- Heat oil in a cooking pan over medium heat. Take any amount of garlic that you need, add it to the pan and lower the heat to medium-low. If using for marinades, quickly stir then remove off heat. If using for regular stir-fry, quickly stir then add other ingredients.
- If used for dipping sauce (nước chấm), add the dehydrated garlic to fish sauce and season up to taste with water, sugar, fish sauce, and lime (or vinegar).
Please note this product cooks quickly with the heat on. If using multiple herbs, prepare them separately as they have different cooking times.

I'm sorry but if you haven't tried this garlic for all the activities above, you're not living enough. I came home after a night out and made bánh tráng trộn with these fried garlic pieces - hands down the best midnight snack i've ever had! Once you taste something superior you can't go back. Note that this product is definitely more deeply garlicky than your average grocery store bulb (maybe because the product is dehyrated?), and a little goes a long way.
