You can use dehydrated lemongrass in multiple ways. Here are three of our favorite ways to use or rehydrate this classic Vietnamese herb.
- Use in place of fresh lemongrass.
- Add equal parts of water and dehydrated lemongrass in a small bowl and let it bloom for one to two minutes. In the meantime, heat the oil in a cooking pan over medium heat for about one to two minutes. When the oil is hot, lower the heat to medium-low. Add the lemongrass to the pan and quickly stir until the herbs become aromatic. Use the herbs to marinate a dish or in your dish of choice.
- Add equal parts water or oil for 1 to 2 minutes. The Vân Vân delta lemongrass will bloom and taste similar to fresh lemongrass.
Please note this product cooks quickly with the heat on. If using multiple herbs, prepare them separately as they have different cooking times.

I used this product to marinade all of my proteins, from grilled pork to roasted chicken to pan fried fish. The lemongrass added so much flavor and fragrance to my food - this kind of depth and umami you could only find in your grandma's kitchen.
