Our Palmyra Sugar comes from the Palmyra palm trees in An Giang. Native to the Seven Mountains area, Palmyra palms have grown wild for centuries, thriving in the mineral-rich, sandy soil of Southern Vietnam’s tropical climate. These majestic, slow-growing trees take 30 years to mature and can live up to 100 years.
100% pure, organic, and unrefined Palmyra Sugar is made from floral nectar, carefully harvested by the Khmer communities in Tri Tôn and Tịnh Biên. This traditional Khmer craft, passed down for generations, requires skilled harvesters to climb 60–100 feet to collect the nectar by hand. This is a labor-intensive and dangerous job that few young artisans pursue today.
Shortly after harvest, the fresh nectar is cooked and caramelized for hours over wood-burning stoves until it reduces into a darker color and thicker syrup. Lastly, the syrup is stirred until it gets to a more solid form. Dehydrated for a longer shelf life, our Vietnamese Palmyra Sugar comes in an easy-to-use granulated form. It is perfect for baking, cooking, or sweetening drinks. With a well-rounded sweetness, delicate tang, and subtle umami, it’s an exceptional natural sweetener and a flavorful alternative to refined cane sugar.
