For the Crust
Preheat oven to 350°F (175°C). Line the baking pan with parchment paper. In a large mixing bowl, combine cold, cubed butter with all-purpose flour and powdered sugar, using the paddle attachment. Mix until the dough achieves a light yellow hue and holds together. Press the dough into the baking pan. Bake at 350°F (175°C) for 15-20 minutes or until the crust turns a light golden brown. In a blender, combine sugar and Delta Lemongrass, blending until the lemongrass is finely chopped. Mix the lemongrass-infused sugar with lemon juice, eggs, and all-purpose flour. Pour the filling mixture over the pre-baked crust. Bake at 325°F (163°C) for 20-22 minutes or until the filling is slightly firm to the touch.
